Pumpkin spice and everything nice: Gluten free cookies

10 minute, easy-to-bake gluten free pumpkin spice sugar cookie recipe.

‘Tis the season. Fall is already here. There is nothing I love more than cold weather and the smell of pumpkin spice. These delicious melt-in-your-mouth cookies are always a hit at my house. Plus, they are gluten free. These cookies are easy to make and most ingredients can easily be found in your pantry.

This recipe makes about 10-11 cookies per batch and can be made in less than an hour. Recipe can be altered to be non-gluten free if needed.

What this recipe calls for…

Cookie recipe:
-½ cup of unsalted butter
-1 tablespoon of almond milk (can substitute with milk of your choice)
-½ cup brown sugar
-¼ cup maple syrup
-2 ¼ cup of almond flour (can be substituted with 2 cups of all purpose flour if not gluten free)
-1 tsp of baking soda
-1 tsp of pumpkin spice
-1 tsp cinnamon
-1 tsp vanilla extract
-1 tsp salt

Frosting recipe:
-½ cup of unsalted butter softened
-3 tbsp of almond milk
-2 cups of powdered sugar
-1 tsp of pumpkin spice
-1 tsp of cinnamon
-½ tsp of vanilla extract

Directions:
-Preheat oven to 375 degrees
-Mix all of the cookie ingredients together
-Scoop the dough onto a baking sheet
-Bake for 10-12 minutes, depending how crispy you like them
-Take cookies out of the oven and let them cool while you begin the frosting

Frosting Directions:
-In a separate bowl, mix together the softened butter and milk of your choice.
-Slowly add in the powdered sugar. Keep mixing the ingredients together until the frosting’s consistency becomes creamy and runny.
-To finish these seasonal cookies off, just drizzle the frosting on top for garnish and you are good to go!
